6 OZS BUTTER
6 OZS SOFT BROWN SUGAR
3 EGGS
8 OZS SELF RAISING FLOUR
2 OZS GROUND ALMONDS
2 OZS GLACE CHERRIES
2 OZS WALNUT PIECES
METHOD:
SOAK FRUIT OVERNIGHT IN CIDER
BEAT BUTTER AND SUGAR TILL SOFT AND CREAMY
ADD EGGS ONE AT A TIME AND BEAT
ADD FLOUR AND GROUND ALMONDS
STIR IN CHERRIES AND WALNUT PIECES
STIR IN FRUIT AND CIDER
GREASE AN 8 INCH CAKE TIN AND SPOON IN MIXTURE
COOK FOR BETWEEN 90-120 MINUTES AT 170 C
